Thai quorn burgers


I watched market kitchen this morning and really wanted to make the mussles in white wine with cream and halapenos but couldnt afford it so i looked through a jamie oliver book (all the pictures are so good) so got really inspired and made up this recipe. It made loads but i ate them all because they tasted so good.

These:

Some Chickpeas
Soya Mince
Crunchy Peanut Butter
Chopped up spring onions
Courgette matchsticks
a green chilli
clove of garlic
chopped fresh coriander
a crushed up lime leaf

Mash it all together in a bowl and then mould into circles of varied fatness and flash fry in screaming olive oil for a minute or two on each side until golden like a a toffee sunset i can hear my housemate downstairs currently hooting his face off about something and now hes doing that post laugh decrescendo moan of exhaustion

put them onto a bed of fresh baby spinach leaves and chopped up tomato seasoned with salt pepper and balsamic vinegar with a final spritttz of lime juice,
